Healthy Chicken Bowl

Americans eat more chicken than any other country in the world. So it’s not a surprise that we’re also always on the lookout for tasty and healthy new recipes when it comes to this versatile bird. Here’s a recipe for a Healthy Chicken Bowl that you won’t get tired of anytime soon.

Yield: 4 Servings

Total Time: 40 Minutes

Prep Time: 20 Minutes

Cook Time: 20 Minutes

Ingredients

For the Chicken

4 (@ 5 oz) boneless skinless chicken breasts
1 tablespoon extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon sweet paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/4 teaspoon black pepper

For the Salad

1 cup shredded red cabbage
2 cups chopped lettuce
1 cup sliced scallions
1 cup halved cherry tomatoes
2 tablespoons extra-virgin olive oil
1 tablespoon raw honey
2 tablespoons apple cider vinegar
¼ teaspoon sea salt
¼ teaspoon black pepper

Directions

Preheat the oven to 425 degrees.

Mix fresh lime juice, red pepper flakes, ground cumin, paprika, cinnamon, sea salt, and black pepper in a small bowl. Rub the mixture onto the chicken breasts.

Heat extra virgin olive oil in a skillet and sear in the chicken breasts for about 5 minutes per side or until golden browned.

Transfer to a baking dish and roast in the oven for 10 minutes. Remove from oven and slice.

Mix cherry tomatoes, red cabbage, cucumbers, and lettuce; drizzle with apple cider vinegar, raw honey, and olive oil—season with sea salt and pepper.

Divide the salad among serving bowls and top each with roasted chicken. Enjoy!
