Baked Lemon Tilapia with Cashew-Yogurt Sauce

If a recipe for Baked Lemon Tilapia with Cashew-Yogurt Sauce isn’t something you’d normally try, now’s your chance! Cashews are making the news these days – and for good reason! They are delicious and nutritious! Cashews are a good source of fiber,  protein, iron, and unsaturated fats, as well as magnesium copper, and zinc. Let’s face it, white fish can be a little bland. This rich but fresh sauce really brings the zing!

Yield: 6 Servings

Total Time: 20 Minutes

Prep Time: 5 minutes

Cook Time: 15 Minutes

Ingredients:

1 1/2 pounds tilapia fillets
2 tablespoons olive oil
1/2 cup fresh orange juice
¼ teaspoon sea salt
¼ teaspoon black pepper

Cashew-Yogurt Sauce:

2 cups Greek yogurt
2 cups toasted cashews
1/2 cup fresh lemon juice
2 tablespoons raw honey
¼ teaspoon sea salt
¼ teaspoon black pepper

Directions:

Preheat your oven to 350 degrees.

Drizzle the fish with olive oil and fresh lemon juice, and sprinkle with sea salt and pepper.

Place the fish into a baking dish.

Place in the oven and bake for 20 minutes or until cooked through and golden brown on the outside.

Process toasted cashews, Greek yogurt, fresh lemon juice, raw honey, sea salt, and pepper until smooth in a food processor.

Divide the fish onto serving plates and drizzle each with the yogurt sauce. Enjoy your Baked Lemon Tilapia with Cashew-Yogurt Sauce!
